A Siamese cat's dark hair comes from a gene (or its products) that is ';suppressed'; when the skin is warm. Where the skin is cooler, the the gene/products make the hairs darker. That's why you see the ';points'; on the face, ears, extremities, and tail; those are all the coolest parts of the body. Fever, however, suppresses the gene/products again, and the hairs go back to white. Since a hair takes a while to grow, a hair that's white in any area that once used to be dark is a signal of an increase in temperature for a fairly extended period of time. By the time you start seeing the light-colored hairs, chances are that the infection has already been conquered; however, if you think your cat is ill, you shouldn't let that stop you from taking it to a vet.
It did happen to two of mine that I was fostering when they had FIP. But I have one that is about a year and a half, and he got a lot of white hair around his eyes after an eye infection. The hair that fell out grew back white.
You are correct this is called a ';fever coat'; and normally appears after a siamese or cat in general has come off an illness that resulted in fever. The greyness does grow out, however takes time. I have attached a link for you from a website that was forwarded to me recently.
